Let butter soften at room temperature. Heat air fryer to 375°F.

Grate both types of cheese using the large holes of a box grater (about 1 cup each). Mix together in a medium bowl.

Spread butter on one side of each bread slice. Flip two slices over and divide cheese mixture evenly between them. Top with remaining bread slices, butter-side up. Press gently to close.

Place sandwiches in air fryer basket (one at a time if needed). Air fry for 3 minutes, flip, then cook 3-4 minutes more until golden brown. If needed, flip again and cook 1-2 minutes for perfect browning.
