Slice the chicken breast horizontally to create two thin cutlets. Season both sides with salt and pepper.

In one shallow bowl, mix panko breadcrumbs, Parmesan cheese, oregano, and garlic powder. In another bowl, lightly whisk the egg.

Dip each chicken cutlet in egg, letting excess drip off. Then coat evenly in the panko-Parmesan mixture, pressing gently to help it stick.

Spray the air fryer basket with oil, place coated cutlets inside without overcrowding. Lightly spray tops with oil. Cook at 400°F for 10-12 minutes, flipping halfway, until golden brown and internal temperature reaches 165°F.
