Quick Air Fryer Shrimp Recipe (Print Version)

# Ingredients:

01 - 1 pound jumbo shrimp (21-25 count), peeled and deveined.
02 - 1 tablespoon extra virgin olive oil.
03 - 1 small lemon, zest and juice.
04 - 1 teaspoon garlic powder.
05 - 1 teaspoon dried parsley.
06 - 1/2 teaspoon dried oregano.
07 - 1/4 teaspoon kosher salt.
08 - 1/4 teaspoon black pepper.
09 - 1/3 cup Italian seasoned whole wheat breadcrumbs.
10 - 1/4 cup grated Parmesan cheese.
11 - 1 large egg.
12 - Nonstick cooking spray.
13 - Fresh parsley or chives for garnish (optional).

# Instructions:

01 - Pat shrimp dry and mix with oil, lemon, seasonings in bowl. Let stand 15 minutes or chill 1 hour.
02 - Mix breadcrumbs and Parmesan in shallow dish. Beat egg in separate dish.
03 - Dip shrimp in egg, then coat with breadcrumb mixture. Place on lined baking sheet.
04 - Heat air fryer to 390°F. Spray basket with cooking spray.
05 - Air fry shrimp in single layer for 2 minutes, flip, cook 2 minutes more until golden.
06 - Garnish with herbs and lemon if desired. Serve hot.

# Notes:

01 - Can be stored in fridge up to 3 days.
02 - Reheat in oven at 350°F to keep crispy.
03 - Can be frozen up to 3 months.
04 - Don't marinate too long in lemon juice.
