Aloo Palak Potato Spinach Curry (Print Version)

# Ingredients:

→ Vegetables

01 - 3 medium potatoes, peeled and chopped
02 - 1 onion, chopped
03 - 250g chopped spinach (fresh or frozen)

→ Spices

04 - 1/4 teaspoon cumin seeds
05 - 4 cloves garlic, minced
06 - 1/2 inch ginger, grated
07 - 2 teaspoons ground coriander
08 - 1 teaspoon ground cumin
09 - 1 teaspoon ground turmeric
10 - 1 teaspoon ground paprika
11 - Salt to taste

→ Oils

12 - 2 tablespoons vegetable oil

# Instructions:

01 - Boil potatoes in a large pot until tender, about 15 minutes. Drain water and set aside.
02 - Heat oil in a large saucepan on medium-high heat. Add cumin seeds and cook until sizzling. Add onions and cook until soft, about 3 minutes.
03 - Add garlic and ginger and cook for another minute, stirring constantly to prevent burning.
04 - Add ground coriander, cumin, turmeric, and paprika. Stir to combine with aromatics.
05 - Stir in spinach and cook, stirring until wilted, about 2 minutes.
06 - Season with salt. Add potatoes and stir occasionally for flavors to blend, about 3 minutes.

# Notes:

01 - For a smoother curry, pulse half the spinach in a blender before adding to the pan.
