# Ingredients:

01 - 1 red apple, cut into matchstick pieces
02 - 1 green apple, cut into matchstick pieces
03 - 2 tablespoons lemon juice
04 - 1 cup canned mandarin segments, drained
05 - ⅓ cup sweetened dried cranberries

→ Vegetables

06 - 2 cups matchstick carrots
07 - ¼ cup yellow onion, finely diced

→ Dressing

08 - ½ cup vanilla yogurt
09 - ¼ cup mayonnaise
10 - 1 tablespoon sugar
11 - ¼ teaspoon salt
12 - ¼ teaspoon black pepper

# Instructions:

01 - Slice both the red and green apples into matchstick pieces. Place them in a bowl, pour the lemon juice over the apple pieces, and toss well to coat. Let sit for about 5 minutes to prevent browning.
02 - In a large mixing bowl, combine the matchstick carrots, diced yellow onion, and dried cranberries.
03 - Add the lemon-soaked apple pieces to the mixing bowl with the other ingredients.
04 - Add the vanilla yogurt, mayonnaise, sugar, salt, and black pepper to the bowl. Stir everything together until well combined and all ingredients are evenly coated.
05 - Gently fold in the drained mandarin segments, being careful not to break them apart.
06 - Cover the bowl and refrigerate for at least 3 hours before serving to allow the flavors to meld together.
