Apple Pie Chia Pudding (Print Version)

# Ingredients:

→ Pudding Base

01 - ½ cup chia seeds
02 - 2 cups non-dairy milk
03 - 4 tablespoons apple sauce
04 - 1 ½ tablespoons maple syrup
05 - 1 ¼ teaspoon apple pie spice
06 - ¼ cup dairy-free Greek-style yogurt

→ Caramelized Apples

07 - 1 large Honeycrisp apple
08 - 2 teaspoons coconut oil
09 - 1 tablespoon maple syrup
10 - 1 teaspoon ground cinnamon

# Instructions:

01 - Combine chia seeds, non-dairy milk, apple sauce, maple syrup, apple pie spice, and dairy-free yogurt in a large bowl or storage container. Mix thoroughly until well incorporated.
02 - Cover and refrigerate overnight, or for a minimum of 1 hour, allowing pudding to thicken and chia seeds to fully hydrate.
03 - Core the apple and dice into small, uniform pieces for even cooking.
04 - In a pan over medium heat, combine diced apple, coconut oil, maple syrup, and cinnamon. Sauté for approximately 5 minutes until apples soften and develop a rich brown caramelization.
05 - Divide the set chia pudding between serving dishes. Top with warm caramelized apples, a light dusting of cinnamon, and an optional drizzle of maple syrup.

# Notes:

01 - For optimal texture, stir the pudding once or twice during setting time to prevent clumping.
02 - This pudding can be prepared in advance and stored refrigerated for up to 4 days.
