Preheat oven to 200°C and line a baking sheet with parchment paper.

Roll out thawed puff pastry on a lightly floured surface to remove creases.

In a bowl, whisk together 4 eggs, milk, salt, and black pepper until well combined.

Spread the egg mixture evenly over the pastry. Evenly distribute crumbled bacon, shredded cheddar, crumbled feta, and sautéed spinach on top.

Gently roll the pastry into a log, starting from a long edge. Slice the log into 12 even pieces.

Place slices cut-side up on the baking sheet. Brush the tops with beaten egg.

Bake for 15–20 minutes until pinwheels are puffed and golden.
