Preheat your oven to 375°F (190°C).

Lightly grease a baking dish (about 8×8 inches or similar) with cooking spray or a little olive oil.

In a large bowl, combine the cottage cheese, eggs, shredded cheese, and green onions (if using). Season with salt and pepper. If adding any vegetables, mix them in as well.

Pour the mixture into the prepared baking dish, spreading it evenly. Place in the preheated oven and bake for about 25-30 minutes, or until the eggs are set and the top is slightly golden.

Remove from the oven and let it cool for a few minutes. Cut into squares and serve warm.
