Baked Fish with Tomatoes (Print Version)

# Ingredients:

01 - 1 fish fillet.
02 - 1 teaspoon paprika.
03 - 1 teaspoon Italian seasoning.
04 - 1 teaspoon Cajun seasoning.
05 - ½ teaspoon chili flakes.
06 - 1 teaspoon fish seasoning (optional).
07 - ½ teaspoon salt.
08 - ½ teaspoon black pepper.
09 - 3 tablespoon cooking oil.
10 - 2 cups cherry tomatoes.
11 - ¼ cup olives.
12 - 2 sprigs fresh parsley.
13 - 2 sprigs fresh thyme.
14 - 3 garlic cloves, minced.
15 - 2 tablespoon water.
16 - 3 tablespoon salted butter.

# Instructions:

01 - Preheat oven to 400°F.
02 - Mix seasonings in bowl, reserve 1 teaspoon. Rub mixture on both sides of fish.
03 - Heat oil in pan over medium heat. Sear fish 1 minute per side until charred but not fully cooked.
04 - In same pan, sauté tomatoes, olives, herbs, garlic and reserved seasoning for 3 minutes.
05 - Place fish back in pan, top with butter. Bake at 400°F for 10 minutes until cooked through.

# Notes:

01 - Fish should be flaky when done.
02 - Use oven-safe pan or transfer to baking sheet.
03 - Best served immediately.
