Baked Shrimp Toast (Print Version)

# Ingredients:

01 - 1 small French baguette, cut in 1/2 inch thick slices.
02 - 1 tablespoon olive oil.
03 - 1 pound shrimp, peeled, deveined and minced.
04 - 1/2 small onion, finely chopped.
05 - 1 stalk celery, finely chopped.
06 - 3 cloves garlic, minced.
07 - 1/4-1/2 teaspoon Cajun seasoning.
08 - 1/4 teaspoon fresh cracked black pepper.
09 - 4 ounces cream cheese, cut in small cubes.
10 - 1/4 cup shaved Parmesan cheese.
11 - 1/4 cup shaved Fontina cheese.
12 - Kosher salt and black pepper to taste.
13 - 1/4 teaspoon crushed red pepper.
14 - 1 green onion, thinly sliced.

# Instructions:

01 - Set broiler to low. Place bread slices on baking sheet and broil 3-5 minutes per side until lightly browned.
02 - Heat oil in skillet over medium heat. Cook shrimp, onion, celery for 1 minute. Add garlic, Cajun seasoning, pepper and cook 1 more minute.
03 - Reduce heat to low. Add cream cheese, Parmesan, and Fontina, stirring until blended. Season with salt and pepper.
04 - Top toasts with shrimp mixture and red pepper. Bake at 400°F for 10 minutes until bubbly. Garnish with green onions.

# Notes:

01 - Watch broiler carefully as it can burn bread quickly.
02 - Use wild-caught shrimp if possible.
03 - Have all ingredients prepped before starting as recipe moves fast.
04 - Can shave cheese with vegetable peeler if pre-shaved not available.
