On medium-high heat, heat the sesame oil in a large skillet or wok.

Add the peas and carrots mix, chopped onion, and minced garlic to the pan. Stir-fry until the vegetables are tender.

Lower the heat to medium-low, push the vegetable mixture to one side of the skillet, and pour the beaten eggs into the other side. Scramble the eggs until fully cooked.

Add the cooked rice and soy sauce to the pan. Mix everything together well. Stir-fry until the rice is thoroughly heated.

Once everything is evenly combined and heated through, remove from the heat and serve hot.
