Black Cherry Granita Sparkling Ice (Print Version)

# Ingredients:

→ Granita Base

01 - 500 grams fresh cherries, pitted and stems removed
02 - 60 millilitres sugar (optional)
03 - 240 millilitres Black Cherry naturally flavoured sparkling water
04 - 15 millilitres almond extract

# Instructions:

01 - Place the pitted cherries into a food processor or blender and blend until completely puréed.
02 - Add the sugar, sparkling water, and almond extract to the cherry purée and blend until fully combined.
03 - Pour the blended mixture into a metal loaf tin or a bowl of similar size. Place the container in the freezer.
04 - After about 4 hours, use a fork to scrape the partially frozen mixture to create icy flakes. Continue to scrape every hour as needed, then allow to freeze overnight.
05 - Before serving, use a spoon to loosen the granita and transfer the scraped flakes into serving dishes.

# Notes:

01 - For a more pronounced cherry flavour, select ripe, in-season cherries and taste for sweetness before adding sugar.
