Place the pitted cherries into a food processor or blender and blend until completely puréed.

Add the sugar, sparkling water, and almond extract to the cherry purée and blend until fully combined.

Pour the blended mixture into a metal loaf tin or a bowl of similar size. Place the container in the freezer.

After about 4 hours, use a fork to scrape the partially frozen mixture to create icy flakes. Continue to scrape every hour as needed, then allow to freeze overnight.

Before serving, use a spoon to loosen the granita and transfer the scraped flakes into serving dishes.
