BLT Chicken Salad (Print Version)

# Ingredients:

→ Main Ingredients

01 - 4 cups shredded rotisserie chicken
02 - 8 strips center cut bacon, cooked crispy and chopped
03 - 2/3 pint grape tomatoes, halved or quartered
04 - 1 ripe avocado, diced
05 - 1/3 cup green onions, thinly sliced

→ Creamy Dressing

06 - 1/2 cup plain Greek yogurt
07 - 1/3 cup mayonnaise
08 - 1 tablespoon ranch seasoning
09 - 1/2 teaspoon freshly cracked black pepper

# Instructions:

01 - Grab a large bowl and start by making your creamy dressing. Spoon in the mayo and Greek yogurt, then sprinkle in that ranch seasoning and freshly cracked pepper. Whisk everything together until it's smooth and well blended - this will be the flavor base for your whole salad.
02 - Toss in your shredded rotisserie chicken, those crispy bacon bits, and the sliced green onions. Give everything a good mix until all those ingredients are coated in the creamy dressing. The warm bacon will start to meld with all those flavors - you'll smell how amazing this is already!
03 - Gently add those halved grape tomatoes to the bowl and fold them in carefully. You want to mix them just enough to incorporate without smashing them, keeping some of their fresh texture intact. They'll add little bursts of juicy flavor throughout your salad.
04 - Take a little taste and see if you need more seasoning. Sometimes I add an extra pinch of salt or a bit more ranch seasoning depending on how flavorful the rotisserie chicken was to begin with. Trust your taste buds here!
05 - Right before you're ready to serve, dice up that avocado and either gently fold it into your portion of chicken salad or arrange the pieces on top. Then pop everything into an airtight container and let it chill in the fridge for at least an hour if you can wait that long - the flavors get even better as they mingle together.

# Notes:

01 - This BLT Chicken Salad is perfect for meal prep! Make a big batch on Sunday and enjoy protein-packed lunches all week. Just remember to add the avocado right before serving to prevent browning.
02 - For a lighter version, you can use all Greek yogurt instead of the mayo/yogurt combo. It will be a bit tangier but still delicious and even higher in protein.
03 - Serve this versatile chicken salad with club crackers, cucumber rounds, stuffed in romaine lettuce boats, or wrapped in a tortilla for a complete meal that satisfies every time.
