Preheat the oven to 400°F (200°C).

Slice the pears in half lengthwise and remove the core and seeds. Place in a cast iron skillet or baking dish, cut side up. Drizzle with olive oil and season lightly with salt and pepper. Turn the pears cut side down.

Transfer the pears to the oven and bake for 15 minutes.

Remove the pears from oven, turn them cut side up and stuff with the crumbled blue cheese, chopped walnuts and thyme leaves. Return to the oven for 8-10 minutes, until the cheese has slightly melted.

Mix the honey with Aleppo pepper in a small bowl.

Once the pears are done cooking, transfer to a platter or individual plates and drizzle with the spiced honey. Garnish with flaky salt and extra thyme leaves if desired.
