Blue Cheese Walnut Thyme Twirls (Print Version)

# Ingredients:

→ Pastry Base

01 - 2 sheets of square puff pastry
02 - 2 tablespoons honey
03 - 1 tablespoon milk (for brushing)

→ Filling

04 - 100g blue cheese, crumbled
05 - 100g Parmesan cheese, grated
06 - 50g walnuts, chopped
07 - 6-8 sprigs fresh thyme leaves, plus extra for garnish
08 - Sea salt and cracked black pepper, to taste

# Instructions:

01 - Preheat oven to 180°C (350°F). For non-fan forced electric ovens, increase to 200°C (390°F).
02 - Drizzle 1 tablespoon of honey over each sheet of puff pastry, spreading evenly.
03 - Distribute the chopped walnuts, crumbled blue cheese, and grated Parmesan evenly between both pastry sheets. Sprinkle with fresh thyme leaves and season with sea salt and cracked pepper.
04 - Tightly roll up each pastry sheet. Cut each roll in half lengthwise, tucking in any loose filling as needed.
05 - On a sheet of baking paper, carefully twist each pastry length and shape into a round coil.
06 - Brush the pastry coils with milk to ensure a golden finish.
07 - Bake in the preheated oven for 25-30 minutes, until the pastry is puffed, golden brown and completely cooked through.
08 - Remove from the oven, garnish with additional fresh thyme leaves and serve warm.
