Crunchy Broccoli Honey Dijon Salad (Print Version)

# Ingredients:

01 - 4 cups broccoli florets, finely chopped
02 - 1 cup purple cabbage, finely chopped
03 - 6 slices cooked bacon, finely chopped
04 - 1/2 red onion, finely diced
05 - 1/2 cup raw cashews, finely chopped
06 - 1/2 cup Parmigiano Reggiano, freshly grated

→ For the Honey Dijon Vinaigrette

07 - 1/2 cup olive oil
08 - 3 tablespoons Dijon mustard
09 - 2 tablespoons honey
10 - 1 tablespoon apple cider vinegar
11 - 2 cloves garlic, mashed
12 - 1/2 teaspoon kosher salt
13 - 1/2 teaspoon ground black pepper

# Instructions:

01 - Add olive oil, dijon mustard, honey, apple cider vinegar, mashed garlic, sea salt, and ground black pepper to a large mason jar. Place the lid on and shake vigorously until the dressing is creamy. Alternatively, whisk the ingredients together in a bowl.
02 - Cook the bacon according to your preferred method until crisp.
03 - While the bacon is cooking, wash and finely chop the broccoli, cabbage, onion, and cashews, and add them to a large bowl.
04 - Allow the cooked bacon to cool slightly before chopping it finely and adding it to the bowl with the vegetables.
05 - Pour the prepared vinaigrette into the bowl and toss to coat all ingredients thoroughly.
06 - Grate the Parmigiano Reggiano over the broccoli salad and toss once more until the cheese is fully incorporated. Serve immediately or refrigerate for later.
