Fresh Bruschetta Chicken Pasta (Print Version)

# Ingredients:

→ Proteins

01 - 2 medium chicken breasts (approx. 1 lb)

→ Pasta

02 - 12 oz pasta (penne or fusilli)

→ Fresh Ingredients

03 - 2 cups fresh tomatoes, diced
04 - 1 cup fresh basil, chopped
05 - 3 cloves garlic, minced

→ Seasonings & Oil

06 - 3 tbsp olive oil
07 - 1 tbsp balsamic vinegar
08 - Salt and pepper, to taste

# Instructions:

01 - Marinate chicken breasts in 1 tbsp olive oil, salt, pepper, 1 minced garlic clove, and ¼ cup chopped basil for 30 minutes. Grill until fully cooked (165°F), then slice into strips.
02 - Boil pasta in salted water until al dente. Drain and toss with 1 tbsp olive oil.
03 - Combine diced tomatoes, remaining basil, garlic, balsamic vinegar, and a drizzle of olive oil.
04 - Toss pasta with the tomato mixture and grilled chicken. Serve warm, garnished with fresh basil and optional Parmesan cheese.
