Brussels Sprout Casserole (Print Version)

# Ingredients:

01 - 5 slices bacon.
02 - 3 tablespoons unsalted butter.
03 - 2 small shallots, finely chopped.
04 - 2 lbs Brussels sprouts, halved.
05 - Kosher salt.
06 - 1/2 teaspoon cayenne pepper.
07 - 3/4 cup heavy cream.
08 - 1/2 cup shredded Gruyère.
09 - 1/2 cup shredded sharp white cheddar.

# Instructions:

01 - Cook bacon in large ovenproof skillet until crispy, about 8 minutes. Remove bacon and discard fat.
02 - Melt butter in same skillet. Add shallots and brussels sprouts, season with salt and cayenne. Cook until tender, about 10 minutes.
03 - Chop cooled bacon finely.
04 - Remove from heat, add cream. Top with both cheeses and chopped bacon.
05 - Bake at 375°F for 12-15 minutes until cheese is bubbly. Broil if needed for golden top.

01 - Can broil briefly for golden cheese top.
02 - Use ovenproof skillet to make it one-pan.
