Burrata Bruschetta (Print Version)

# Ingredients:

01 - 2 pounds ripe tomatoes, diced.
02 - 2-3 cloves garlic, minced.
03 - 1/2 ounce fresh basil, chopped.
04 - Salt and pepper to taste.
05 - 5 tablespoons olive oil, divided.
06 - 1 baguette.
07 - 2 teaspoons red wine vinegar.
08 - 1 ball burrata cheese (8 ounces).
09 - Balsamic glaze for drizzling.

# Instructions:

01 - Heat oven to 400°F.
02 - Dice tomatoes, mince garlic, and chop basil.
03 - Mix diced tomatoes with salt, pepper, garlic and basil in a bowl. Let sit to release excess liquid.
04 - Slice baguette into 1/2-inch pieces. Brush both sides with 3 tablespoons olive oil and place on baking sheet.
05 - Bake 5-10 minutes until golden, flipping halfway through. Transfer to serving platter.
06 - Drain excess liquid from tomatoes. Add 2 tablespoons olive oil and red wine vinegar.
07 - Top toasts with tomato mixture, add dollops of burrata, drizzle with balsamic glaze and crack fresh pepper.

# Notes:

01 - Use fresh bakery bread for best results.
02 - Can prep tomato mixture one day ahead.
03 - Plan for about 3 pieces per person.
