Cajun Chicken Pasta (Print Version)

# Ingredients:

01 - 8 oz linguine pasta.
02 - 2 boneless skinless chicken breasts.
03 - 2 tsp olive oil.
04 - 2 Tbsp unsalted butter.
05 - 1 1/2 to 2 Tbsp cajun seasoning, divided.
06 - 3 garlic cloves, minced.
07 - 2/3 cup diced tomatoes.
08 - 1 1/2 cup heavy whipping cream.
09 - 1/2 cup grated parmesan cheese.
10 - 2 Tbsp parsley, finely chopped.

# Instructions:

01 - Boil salted water and cook linguine until al dente. Reserve 1/2 cup pasta water before draining.
02 - Pound chicken to even thickness, season with 1½ Tbsp cajun seasoning. Sear in oil until cooked through, then slice.
03 - Sauté garlic in butter until fragrant. Add tomatoes and cook 2 minutes. Add cream, remaining cajun seasoning, and parmesan. Simmer.
04 - Add sliced chicken and pasta to sauce. Toss until warm. Add reserved pasta water if needed to thin sauce.
05 - Garnish with parmesan and parsley. Serve hot.

# Notes:

01 - Use non-reactive pan to prevent grainy sauce.
02 - Adjust cajun seasoning to taste based on brand's salt content.
