Heat olive oil and butter in a large skillet over medium heat. Add thinly sliced onions and a pinch of salt. Cook, stirring occasionally, until onions are golden brown and deeply caramelized, about 20 to 25 minutes. Deglaze pan with a splash of water if needed, and season with black pepper.

Preheat oven to 175°C. Arrange sourdough slices on a baking sheet and toast in the oven for 5 to 7 minutes until crisp and lightly browned.

Top each toasted sourdough slice generously with caramelized onions. Arrange brie cheese slices on top and sprinkle with fresh thyme leaves.

Return assembled toasts to the oven for 5 minutes, or until brie just begins to melt.

Remove toasts from oven, drizzle with honey, and garnish with additional fresh thyme if desired. Serve immediately.
