Soft Chewy Sugar Cookies (Print Version)

# Ingredients:

→ Dry Ingredients

01 - 2 3/4 cups (344g) all-purpose flour, spooned and leveled
02 - 1/2 teaspoon baking powder
03 - 1/2 teaspoon baking soda
04 - 1/2 teaspoon salt
05 - 1 cup (200g) granulated white sugar

→ Wet Ingredients

06 - 1 cup (227g) unsalted butter, very softened
07 - 1 egg, at room temperature
08 - 2 teaspoons vanilla

→ For Rolling

09 - 1/4 cup (50g) granulated white sugar

# Instructions:

01 - Turn your oven on to 350°F and line a couple of baking sheets with parchment paper.
02 - Grab a bowl and whisk together your flour, baking powder, baking soda, and salt. Set this aside for now.
03 - In your big bowl, beat the softened butter and sugar with your mixer until it gets really light and fluffy - give it a good 1-2 minutes on high speed.
04 - Pop in your egg and vanilla. Mix on medium speed until everything gets pale and super fluffy, about another 1-2 minutes.
05 - Now mix in those dry ingredients you set aside earlier. Keep the mixer on low and mix just until everything's combined - don't overdo it!
06 - Use a 2 tablespoon scoop to portion out your dough, roll into balls, then roll each ball in that extra sugar. Space them out on your baking sheets and gently flatten each one.
07 - Bake for 9-10 minutes (just 6-8 cookies at a time), then let them rest on the baking sheet for 5 minutes before moving to a cooling rack.

# Notes:

01 - Make sure your butter is very soft but not melted for the best texture
02 - Space cookies at least 2 inches apart as they will spread while baking
03 - Bake in smaller batches (6-8 cookies) for the most even results
