Set oven to 150°C (300°F) to allow the mixture to dry and crisp without burning sensitive seeds.

Line a baking tray with parchment paper, allowing for slight overhang to ease removal.

In a medium bowl, combine chia seeds and flax seeds thoroughly for even distribution.

Stir water into seed blend. Allow mixture to rest 10–15 minutes, stirring occasionally, until a gel-like texture forms.

Add garlic powder, onion powder, sea salt, and dried thyme to the hydrated mixture. Mix well until seasonings are fully integrated.

Transfer mixture onto prepared baking sheet. Evenly spread to approximately 3mm thickness using a spatula or the back of a spoon. For consistency, overlay with a second sheet of parchment and flatten with a rolling pin.

Remove parchment overlay if used. Lightly score surface into cracker-sized pieces using a sharp knife or pizza cutter.

Bake in preheated oven for 35–40 minutes until edges are golden and the center is set. Optionally, flip halfway through baking for enhanced crispness.

Allow to cool completely on the baking sheet. Crackers will continue to crisp as they cool.

Once fully cooled, break along the scored lines or snap into desired sizes.
