Chicken Alfredo (Print Version)

# Ingredients:

01 - 500g (1lb) chicken breasts.
02 - 500g (1lb) fettuccine pasta.
03 - 2 cups heavy cream.
04 - 1½ cups Parmesan cheese.
05 - 2 garlic cloves.
06 - 3 tbsp butter.
07 - 2 tbsp olive oil.
08 - 1 tbsp Italian herbs.
09 - 1 tsp garlic powder.
10 - 1 tsp salt.
11 - ½ tsp pepper.
12 - Fresh parsley for serving.
13 - Extra Parmesan for serving.

# Instructions:

01 - Boil salted water and cook fettuccine until al dente (9-12 minutes). Save ½ cup pasta water before draining.
02 - Slice chicken breasts horizontally to make thin cutlets.
03 - Season chicken with olive oil, Italian seasoning, garlic powder, salt and pepper.
04 - Cook chicken in a hot pan for 2-3 minutes each side until golden. Set aside.
05 - In the same pan, melt butter and cook garlic until fragrant (30-60 seconds).
06 - Add cream and herbs, simmer for 2-3 minutes until slightly reduced.
07 - Mix in Parmesan cheese, cook 2-3 minutes until sauce thickens.
08 - Season with salt and pepper to taste.
09 - Combine sliced chicken, pasta, and sauce with some pasta water.
10 - Top with fresh parsley and extra Parmesan to serve.
