Boil salted water and cook fettuccine until al dente (9-12 minutes). Save ½ cup pasta water before draining.

Slice chicken breasts horizontally to make thin cutlets.

Season chicken with olive oil, Italian seasoning, garlic powder, salt and pepper.

Cook chicken in a hot pan for 2-3 minutes each side until golden. Set aside.

In the same pan, melt butter and cook garlic until fragrant (30-60 seconds).

Add cream and herbs, simmer for 2-3 minutes until slightly reduced.

Mix in Parmesan cheese, cook 2-3 minutes until sauce thickens.

Season with salt and pepper to taste.

Combine sliced chicken, pasta, and sauce with some pasta water.

Top with fresh parsley and extra Parmesan to serve.
