Preheat oven to 375°F (190°C). In a medium mixing bowl, whisk together eggs and milk until well combined. Season with salt, pepper, and garlic powder (if using). Add shredded chicken, diced bell peppers, spinach, onions, and half of the shredded cheese. Stir until evenly mixed.

Heat olive oil in an oven-safe skillet over medium heat. Once hot, pour the egg mixture into the skillet. Cook for 3-4 minutes, gently stirring once or twice to prevent overcooking on the edges.

Sprinkle remaining cheese over the frittata. Transfer skillet to the preheated oven and bake for 12-15 minutes, or until eggs are fully set in the center and top is golden brown. Remove from oven and allow to cool for a few minutes before slicing.
