Chicken Gnocchi Soup (Print Version)

# Ingredients:

01 - 4 tablespoons butter.
02 - 1 small yellow onion, diced.
03 - 1 stick celery, diced.
04 - 1/2 cup carrots, julienned.
05 - 3 garlic cloves, minced.
06 - 1/4 cup all-purpose flour.
07 - 2 cups half-and-half.
08 - 4 cups chicken broth.
09 - 1/2 teaspoon thyme.
10 - 1/2 teaspoon mustard powder.
11 - 1 lb boneless skinless chicken breasts.
12 - 16 oz potato gnocchi.
13 - 1 cup fresh spinach, roughly chopped.
14 - Red pepper flakes (optional).

# Instructions:

01 - Melt butter, cook onions, celery, carrots 5 minutes until soft. Add garlic 1 minute.
02 - Add flour, cook 2 minutes until golden. Gradually stir in broth and half-and-half.
03 - Add seasonings and chicken, gently simmer 10-15 minutes. Rest chicken 5 minutes, dice and return.
04 - Add gnocchi and cook about 5 minutes per package instructions.
05 - Add spinach and red pepper flakes. Simmer until spinach wilts.
06 - Use 1 Tbsp butter, omit flour. Add chicken, vegetables, broth, seasonings. Cook low 6-8 hours. Add half-and-half-cornstarch mixture and gnocchi last 30 minutes.

# Notes:

01 - Can use precooked chicken.
02 - Can substitute sausage for chicken.
03 - Soup thickens more as it simmers.
