Grab some paper towels and pat your chicken dry. Mix up the paprika, cumin, salt, and pepper, then season both sides of the chicken really well.

Heat up your big skillet with a tablespoon of olive oil until it's nice and hot. Pop in your seasoned chicken and let it sizzle for about 4-5 minutes on each side until it's got a beautiful golden brown crust. Take it out and let it rest on a plate.

Add another splash of olive oil to the same pan. Throw in your sweet potato chunks and let them cook for about 7-10 minutes, giving them a stir now and then. You want them to start getting soft and get those nice caramelized spots.

Toss in your diced onion and garlic. Let them cook with the sweet potatoes for a couple minutes until your kitchen starts smelling amazing.

Put your chicken back in the pan, nestling it between the sweet potatoes. Sprinkle fresh herbs all over, cover the pan, and let everything cook together for about 5-7 minutes until your chicken is fully cooked and sweet potatoes are fork-tender.

If you're using it, squeeze some fresh lemon juice over everything and throw on some extra herbs. Serve it up while it's hot!
