One-Pan Chicken Sweet Potato Dinner (Print Version)

# Ingredients:

→ For the Chicken

01 - 1 lb boneless skinless chicken thighs (or 2 large chicken breasts)
02 - 1 teaspoon paprika
03 - 1 teaspoon ground cumin
04 - 1 teaspoon salt
05 - 1/2 teaspoon black pepper

→ Vegetables and Aromatics

06 - 2 medium sweet potatoes, peeled and cut into 1-inch cubes
07 - 1 medium onion, diced
08 - 3 cloves garlic, minced
09 - 1 teaspoon fresh thyme or rosemary, chopped

→ Everything Else

10 - 2 tablespoons olive oil
11 - 1/4 teaspoon chili flakes (optional)
12 - 1 tablespoon lemon juice (optional)
13 - Extra fresh herbs for garnish

# Instructions:

01 - Grab some paper towels and pat your chicken dry. Mix up the paprika, cumin, salt, and pepper, then season both sides of the chicken really well.
02 - Heat up your big skillet with a tablespoon of olive oil until it's nice and hot. Pop in your seasoned chicken and let it sizzle for about 4-5 minutes on each side until it's got a beautiful golden brown crust. Take it out and let it rest on a plate.
03 - Add another splash of olive oil to the same pan. Throw in your sweet potato chunks and let them cook for about 7-10 minutes, giving them a stir now and then. You want them to start getting soft and get those nice caramelized spots.
04 - Toss in your diced onion and garlic. Let them cook with the sweet potatoes for a couple minutes until your kitchen starts smelling amazing.
05 - Put your chicken back in the pan, nestling it between the sweet potatoes. Sprinkle fresh herbs all over, cover the pan, and let everything cook together for about 5-7 minutes until your chicken is fully cooked and sweet potatoes are fork-tender.
06 - If you're using it, squeeze some fresh lemon juice over everything and throw on some extra herbs. Serve it up while it's hot!

01 - You can prep all the veggies and season the chicken ahead of time to make dinner even quicker
02 - The sweet potatoes should be cut about the same size so they cook evenly
