Chinese Chicken Salad (Print Version)

# Ingredients:

→ Salad Base

01 - 2 cups cooked shredded chicken (rotisserie recommended)
02 - 2 cups romaine lettuce, thinly chopped
03 - 2 cups napa cabbage, thinly chopped
04 - 1 cup carrots, julienned or shredded
05 - 1/2 cup green onions, chopped
06 - 1/3 cup fresh cilantro, chopped
07 - 1 cup mandarin oranges
08 - 1/3 cup sliced almonds (or cashews)
09 - Sesame seeds for garnish (optional)

→ Ginger-Sesame Dressing

10 - 3 tablespoons rice wine vinegar
11 - 2 tablespoons reduced sodium soy sauce
12 - 2 cloves garlic, minced
13 - 2 tablespoons honey
14 - 1 tablespoon fresh grated ginger
15 - 2 teaspoons sesame oil
16 - 3 tablespoons olive oil

# Instructions:

01 - Combine rice wine vinegar, soy sauce, minced garlic, honey, grated ginger, sesame oil, and olive oil in a small jar with a sealed lid. Shake vigorously until thoroughly combined. Reserve any extra dressing in the jar for future use.
02 - In a large bowl, combine the shredded chicken, romaine lettuce, napa cabbage, carrots, green onions, cilantro, mandarin oranges, and sliced almonds. Toss gently to mix all ingredients evenly.
03 - Drizzle the ginger-sesame dressing over the salad and toss until all ingredients are fully coated. Garnish with sesame seeds if desired. Serve immediately for optimal freshness and texture.

01 - This salad can be prepped ahead of time, but add the dressing just before serving to maintain crispness.
