Warm Chipotle Lime Sweet Potato (Print Version)

# Ingredients:

→ Main Ingredients

01 - 1½ tablespoon avocado oil or olive oil
02 - 2 medium sweet potatoes, cubed
03 - ½ small red onion, sliced
04 - 1 bell pepper, diced
05 - 4 garlic cloves, minced
06 - 2–3 cups curly kale, stems removed and roughly chopped
07 - 4 slices bacon, cooked until crisp and chopped
08 - ⅓–½ cup Chipotle Lime Mayo
09 - Fine salt and black pepper to taste

10 - Fresh cilantro
11 - Green onions
12 - Lime wedges

# Instructions:

01 - Heat 1 tablespoon of oil in a large skillet over medium-high heat. Once hot, add diced sweet potatoes and season with salt and black pepper. Sauté for 10-12 minutes, stirring frequently until sweet potatoes are almost cooked through.
02 - Add the remaining ½ tablespoon of oil along with bell pepper, onion, and garlic. Continue sautéing for 5-10 minutes, stirring throughout for even cooking.
03 - Add the chopped kale and crispy bacon to the skillet. Sauté for 2-3 minutes until the kale is slightly wilted but still retains some texture.
04 - Transfer the mixture to a serving bowl (or leave in skillet) and gently fold in the Chipotle Lime Mayo. Season with additional salt and pepper to taste.
05 - Serve warm, garnished with fresh cilantro and green onions if desired. Accompany with lime wedges for squeezing over individual portions.
06 - Store any leftovers in an airtight container in the refrigerator for up to 4 days.

# Notes:

01 - You can substitute spinach for kale if preferred.
02 - Homemade Chipotle Lime Mayo can be used instead of store-bought Primal Kitchen brand.
