Pit the medjool dates and measure all ingredients accurately.

Combine dates, shredded coconut, coconut oil, vanilla extract, cocoa powder, and honey in a food processor.

Pulse the mixture until it forms a crumbly, cohesive dough.

Transfer mixture onto wax paper and press firmly into a rectangular block about 1.25 centimetres thick.

Melt dark chocolate baking chips and spread evenly over the top, if desired.

Refrigerate the block for approximately 30 minutes or until fully set.
