Christmas Salad (Print Version)

# Ingredients:

01 - 2 cloves garlic, minced.
02 - 2 tablespoons champagne vinegar.
03 - 3 tablespoons honey.
04 - 2 tablespoons Dijon mustard.
05 - 1/4 teaspoon salt.
06 - 1/4 teaspoon fresh ground black pepper.
07 - 1/4 cup olive oil.
08 - 12 ounces fresh spring greens.
09 - 2/3 cup sliced almonds.
10 - 2/3 cup feta cheese.
11 - 4 seedless mandarin oranges, peeled and segmented.
12 - 1 pomegranate, seeded.

# Instructions:

01 - Whisk garlic, champagne vinegar, honey, Dijon mustard, salt and pepper in small bowl. Slowly drizzle in olive oil while whisking.
02 - In large bowl, mix spring greens, almonds, feta cheese, mandarin segments and pomegranate seeds.
03 - Add dressing to salad and toss gently. Season with additional salt and pepper to taste.

# Notes:

01 - Best with fresh mandarins but canned work in a pinch.
02 - Look for pre-seeded pomegranate arils for convenience.
03 - Can substitute feta with Parmesan, goat cheese, or blue cheese.
04 - Also works well with honey poppy seed dressing.
