Pour the water into a small bowl and sprinkle the gelatin evenly over the surface. Let it sit for a few minutes to bloom - you'll notice it gets all wrinkly and absorbs the water. This step is key for getting that perfect mousse consistency later on.

Dump the cottage cheese, cocoa powder, heavy cream, and sweetener into your food processor or blender. Whizz it all up until completely smooth and silky. You really want to make sure there are no lumps of cottage cheese hiding in there - keep blending until it looks like velvet.

Fold the bloomed gelatin into your chocolate mixture, making sure it's fully incorporated. Pour the mousse into serving dishes and pop them in the fridge for at least 2 hours. If you're impatient, you can technically eat it right away, but it'll be more like a thick pudding than a proper set mousse.
