Cranberry Orange Chicken (Print Version)

# Ingredients:

01 - 5-6 chicken thighs, bone in skin on.
02 - 1 tbsp olive oil.
03 - 1/2 tsp salt.
04 - 1/2 tsp pepper.
05 - 2 cloves garlic, minced.
06 - 1 large shallot, finely diced (1/3 cup diced).
07 - 2/3 cup orange juice.
08 - 1 cup chicken stock.
09 - 1 tbsp orange zest.
10 - 1 1/2 tbsp honey (or maple syrup).
11 - 1 tbsp apple cider vinegar.
12 - 1 cup cranberries (+ 2 tbsp for garnish).
13 - 1/2 orange, thinly sliced.

# Instructions:

01 - Preheat the oven to 400°F (200°C).
02 - Season chicken thighs with salt and pepper on both sides. Heat oil in skillet on medium heat and sear chicken for 4-5 minutes per side until golden. Set aside on a plate.
03 - Add diced shallot and minced garlic to the pan and saute for 4-5 minutes until softened. Scrape any chicken bits from bottom of pan.
04 - Add chicken stock, orange juice, zest, vinegar and honey. Add cranberries and simmer 8-10 minutes until cranberries soften and sauce thickens.
05 - Return chicken to pan, spoon sauce over top. Add remaining cranberries and orange slices. Bake 15-20 minutes until chicken reaches 165°F.

01 - Perfect one-pan meal for holidays with crispy chicken and sweet-tart cranberry sauce.
02 - Can use maple syrup instead of honey for sweetener.
