01 - 1 large head cauliflower, cut into florets
02 - 2 cups cooked chicken breast, shredded

03 - 1 cup buffalo sauce
04 - 1/2 cup ranch dressing or blue cheese dressing

05 - 1 cup shredded cheddar cheese
06 - 1 cup shredded mozzarella cheese

07 - 3 green onions, finely chopped
08 - Salt and freshly ground black pepper, to taste
09 - Fresh parsley or chives, chopped, for garnish

# Instructions:

01 - Set oven to 200°C and lightly grease a 23x33 cm baking dish.
02 - Steam or blanch cauliflower florets until just tender, about 5–7 minutes. Drain thoroughly and pat dry to eliminate excess moisture.
03 - In a large bowl, mix shredded chicken with buffalo sauce and ranch or blue cheese dressing. Toss cauliflower florets into the mixture to ensure even coating. Season with salt and pepper.
04 - Spread the cauliflower and chicken mixture in the prepared baking dish and evenly top with shredded cheddar and mozzarella cheeses.
05 - Place in the preheated oven and bake for 20–25 minutes, until cheese is melted and bubbling, and the contents are heated through.
06 - Remove from the oven. Sprinkle with green onions and fresh parsley or chives before serving. Present hot.

01 - Ensure cauliflower is well-drained and patted dry to prevent excess liquid in the dish.
