Creamy Quinoa Porridge (Print Version)

# Ingredients:

→ Base Porridge

01 - 1/2 cup uncooked quinoa
02 - 400 ml full-fat coconut milk
03 - 2 tsp maple syrup
04 - 1 tsp cinnamon
05 - Water as needed for consistency

→ Toppings

06 - 1/2 cup fresh or frozen raspberries
07 - 1/2 cup fresh or frozen chopped mango
08 - 1/4 cup chopped pecans
09 - 2 tbsp coconut shavings

# Instructions:

01 - In a saucepan, combine quinoa, coconut milk, maple syrup and cinnamon. Bring to a boil, then reduce heat and simmer until quinoa is cooked and tender, approximately 12-15 minutes. Add splashes of water as needed to achieve desired consistency.
02 - Divide the quinoa porridge between two bowls. Top with raspberries and mango. Finish by sprinkling with chopped pecans and coconut shavings.
