Creamy Sausage Soup (Print Version)

# Ingredients:

01 - 1 pound Italian sausage, crumbled.
02 - 1 tablespoon olive oil.
03 - 1 onion, diced.
04 - 3 cloves garlic, minced.
05 - 4 cups chicken broth.
06 - 1 can (14.5 oz) diced tomatoes.
07 - 2 cups spinach, chopped.
08 - 1 cup heavy cream.
09 - ½ cup Parmesan cheese, grated.
10 - 1 teaspoon Italian seasoning.
11 - ½ teaspoon crushed red pepper flakes.
12 - Salt and pepper to taste.

# Instructions:

01 - Heat olive oil in large pot over medium heat. Cook crumbled sausage until browned, 5-7 minutes. Remove and set aside.
02 - In same pot, cook onion and garlic until soft and translucent, 2-3 minutes.
03 - Add broth and tomatoes, bring to simmer. Return sausage, add seasonings, and simmer 10 minutes.
04 - Stir in spinach and cook 2-3 minutes until wilted.
05 - Lower heat, gradually add cream and Parmesan. Cook 2-3 minutes until creamy. Serve with extra Parmesan.

# Notes:

01 - Can use turkey or chicken sausage for lighter version.
02 - Temper cream to prevent curdling.
03 - Keeps in fridge 3-4 days.
