Preheat oven to 220°C (425°F). Halve sweet potatoes with a sharp knife, then drizzle cut sides with olive oil and sprinkle with kosher salt.

Place potatoes cut side down on a parchment-lined baking sheet. Bake for 45 minutes, or until a knife can easily be inserted into the potato. The texture should be very tender but still holding its shape.

In a large cast iron skillet, melt butter and honey over medium-high heat. Place cooked sweet potatoes cut side down in the mixture and sear for 3-5 minutes, until caramelized and golden brown.

Transfer to serving plates and add your preferred toppings: fresh herbs, Greek yogurt, lime wedges, avocado, everything spice, or sriracha.
