Crockpot French Onion Soup (Print Version)

# Ingredients:

01 - 2 tablespoons unsalted butter, melted.
02 - 3 pounds yellow onions, thinly sliced (6 medium onions).
03 - 4 garlic cloves, minced.
04 - 1 tablespoon fresh thyme leaves or 1 teaspoon dried thyme.
05 - 1½ teaspoons kosher salt, plus more to taste.
06 - ¼ teaspoon ground black pepper.
07 - 4 cups low-sodium beef broth.
08 - ½ cup dry white wine (Sauvignon Blanc).
09 - 8-12 slices French bread, ¼-inch thick.
10 - 3 tablespoons olive oil.
11 - ½ cup shredded Gruyere cheese.

# Instructions:

01 - Combine butter, onions, garlic, thyme, salt and pepper in 6-quart slow cooker. Cook on high 5-7 hours, stirring occasionally, until onions caramelize.
02 - Stir in broth and wine. Cover and cook on high 30 more minutes.
03 - Place rack in upper third of oven. Broil bread slices brushed with oil for 2-3 minutes per side.
04 - Divide soup between oven-safe bowls. Top each with 2-3 bread slices and 2 tablespoons cheese.
05 - Broil bowls for 2 minutes until cheese browns and bubbles. Season with salt and pepper.
