Crunchy Apple Carrot Salad Citrus (Print Version)

# Ingredients:

→ Salad Base

01 - 2 medium tart apples, such as Granny Smith, julienned
02 - 2 large carrots, peeled and julienned
03 - 60 ml red onion, thinly sliced
04 - 60 ml fresh cilantro or parsley, finely chopped
05 - 60 ml sunflower seeds or chopped walnuts, optional

→ Creamy Citrus Dressing

06 - 60 ml Greek yogurt
07 - 30 ml extra virgin olive oil
08 - 15 ml fresh orange juice
09 - 15 ml fresh lemon juice
10 - 5 ml honey or maple syrup
11 - 5 ml Dijon mustard
12 - Salt and freshly ground black pepper, to taste

# Instructions:

01 - In a large mixing bowl, combine julienned apples, carrots, sliced red onion, and chopped cilantro or parsley. Toss gently to distribute evenly.
02 - In a separate bowl, whisk together Greek yogurt, olive oil, orange juice, lemon juice, honey or maple syrup, Dijon mustard, salt, and black pepper until smooth and creamy.
03 - Pour the dressing over the salad base and toss until everything is evenly coated. Sprinkle sunflower seeds or chopped walnuts on top for added texture, if desired.
04 - Transfer the salad to serving dishes and enjoy immediately for optimal crunch, or refrigerate the dressing separately and mix before serving.
