Date Rolls with Almonds (Print Version)

# Ingredients:

01 - 400 g Medjool dates (approximately 20), pitted
02 - 100 g whole almonds
03 - ¼ cup desiccated coconut

# Instructions:

01 - Add almonds to the bowl of a food processor, and process until finely chopped.
02 - Add in pitted dates and continue to process, scraping down the sides as needed, until dates are chopped and the mixture forms a cohesive mass.
03 - Shape the date mixture into 16 small logs using your hands.
04 - Place desiccated coconut in a shallow bowl and individually roll each log in coconut to coat completely.

01 - These date rolls can be stored in an airtight container at room temperature for up to a week or refrigerated for longer freshness.
