In a heatproof bowl or pitcher, add the boiled water and tea bags. Steep for 5 minutes.

Refrigerate the tea until completely chilled, about 2 hours.

Fill glasses half full with chilled ginger beer. If using alcohol, stir it into the ginger beer.

Tilt each glass and slowly pour the chilled Earl Grey tea down the inside until full.

Add fresh mint leaves to each glass before serving.
