# Ingredients:

04 - Mild cheddar cheese, grated
05 - Milk

06 - Sausage drippings, ¼ cup
07 - All-purpose flour
08 - Salt
09 - Black pepper, freshly ground

# Instructions:

01 - Cook breakfast sausage thoroughly in a cast iron skillet until well browned. Remove sausage from pan and reserve ¼ cup of the drippings.
02 - Add flour to the reserved drippings and cook over medium heat until golden brown. Gradually whisk in milk, stirring constantly to prevent lumps, until the mixture thickens into a creamy gravy. Season with salt and pepper to taste.
03 - Lightly toast the English muffin halves until just golden around the edges.
04 - In a separate skillet, scramble the eggs with a splash of milk until just set but still moist. Remove from heat.
05 - Arrange the toasted English muffin halves on a baking sheet. Spread each with a layer of sawmill gravy, then top with scrambled eggs, crumbled sausage, and a generous sprinkle of grated cheddar cheese.
06 - Place baking sheet under the preheated broiler for 2-3 minutes, until the cheese is completely melted and starting to bubble with golden spots. Watch carefully to prevent burning.
