Crockpot French Onion Meatloaf with Melted Swiss Cheese (Print Version)

# Ingredients:

01 - 3-4 large sweet onions, sliced.
02 - 4 tablespoons salted butter.
03 - 1 tablespoon olive oil.
04 - 1 teaspoon sea salt.
05 - 1 teaspoon coarse black pepper.
06 - 1 teaspoon granulated sugar.
07 - 1 pound ground beef.
08 - 1 cup Italian herb breadcrumbs.
09 - 1 cup milk.
10 - 1 egg.
11 - 1 oz. package French onion soup mix.
12 - 1/2 cup cooking sherry.
13 - 1/2 teaspoon Worcestershire sauce.
14 - 4 oz. Swiss, Gruyère or provolone cheese.
15 - Fresh thyme sprigs for garnish.

# Instructions:

01 - Place sliced onions in slow cooker. Season with salt, pepper, sugar and dot with butter. Cook on LOW for 9 hours.
02 - Mix ground beef, breadcrumbs, milk, egg, and onion soup mix. Shape into a loaf.
03 - Pour sherry and Worcestershire sauce over onions. Place meatloaf on top.
04 - Cook on HIGH for 3 hours until internal temperature reaches 160°F.
05 - Top with cheese slices and cook 20-30 minutes more until melted.
06 - Serve sliced with caramelized onions and cooking juices. Garnish with thyme.

# Notes:

01 - Can caramelize onions in skillet for 15-20 minutes instead of slow cooker.
02 - Internal temperature should reach 160°F for food safety.
