Get your oven nice and hot by preheating it to 400°F (200°C).

Grab a large bowl and toss those halved potatoes with olive oil and all your seasonings - the garlic powder, onion powder, thyme, rosemary, paprika, salt, and pepper. Make sure every potato gets a good coating!

Spread your seasoned potatoes out on a baking sheet, making sure to place them cut-side down - this is the secret to getting that perfect crispy bottom!

Pop them in your preheated oven and let them roast for about 25-30 minutes, or until they're golden brown and crispy on the outside.

As soon as they come out of the oven, sprinkle that Parmesan cheese all over the hot potatoes so it gets a little melty. Top it off with fresh parsley and serve while they're nice and hot!
