Get your oven nice and hot - heat it to 400°F (200°C).

Give your potatoes a good wash and dry. Cut each one in half lengthwise, then slice each half into 3-4 wedges.

Toss your potato wedges with olive oil in a big bowl. Mix up your seasonings in a small bowl, sprinkle over the potatoes, and toss well. Add the Parmesan and give everything another good toss.

Line your baking sheet with parchment paper or grease it lightly. Lay out your wedges in a single layer, skin side down.

Pop them in the oven for 25-35 minutes, flipping them over halfway through. They should come out golden brown and tender.

Transfer to a serving plate, sprinkle with fresh parsley if you like, and serve them up hot with your favorite dipping sauces.
