Rinse lemons thoroughly and remove both peel and rind. Cut the lemons into quarters. Peel ginger root and slice into 2.5 cm segments.

Combine quartered lemons, ginger pieces, and 250 ml water in a blender. Blend until a smooth, thick mixture forms, adding extra water if required for desired consistency.

Position a fine mesh strainer over a large bowl. Pour blended mixture through the strainer and press to extract maximum juice. Discard remaining pulp.

Evenly pour extracted lemon ginger juice into ice cube tray molds. Freeze until solid, then transfer the cubes to airtight freezer bags for storage.

For each serving, place 240 ml boiling water in a mug and dissolve in 1 teaspoon honey. Add 1 lemon ginger ice cube and stir until completely melted before serving.
