Gluten Free Air Fryer Fritters (Print Version)

# Ingredients:

→ Dry Mix

01 - Gluten-free flour - 1 1/2 cups
02 - Brown sugar - 1/4 cup
03 - Baking powder - 2 1/2 teaspoons
04 - Salt - 1 teaspoon
05 - Pumpkin pie spice - 1 teaspoon

→ Apple Mixture

06 - Large apples - 3, peeled and chopped
07 - Butter - 2 tablespoons
08 - Fresh lemon juice - from 1/2 lemon

→ Wet Ingredients

09 - Large eggs - 2
10 - Pure vanilla extract - 2 teaspoons

→ Optional Glaze

11 - Powdered sugar - 1/2 cup
12 - Almond milk - 1 tablespoon

# Instructions:

01 - Get your air fryer nice and hot by preheating it to 400°F for about 5 minutes.
02 - Peel and chop your apples, then toss them with lemon juice and butter to prevent browning. Set aside.
03 - In a bowl, whisk together your gluten-free flour, brown sugar, baking powder, salt, and pumpkin spice until well combined.
04 - Give your eggs a gentle beat in another bowl, stir in the vanilla, then fold in those prepared apples. Mix in your dry ingredients just until combined - add a splash of milk if it seems too thick.
05 - Drop heaping spoonfuls into your preheated air fryer basket. Give them a light spray with coconut oil and cook for 3-4 minutes per side.
06 - Let them cool a few minutes on a wire rack. If you're glazing them, mix up the powdered sugar and almond milk, then drizzle over the top.
