Give your eggs a gentle beat in another bowl, stir in the vanilla, then fold in those prepared apples. Mix in your dry ingredients just until combined - add a splash of milk if it seems too thick.

Drop heaping spoonfuls into your preheated air fryer basket. Give them a light spray with coconut oil and cook for 3-4 minutes per side.
