Green Goddess Salad (Print Version)

# Ingredients:

→ Salad

01 - 1 small cabbage, finely diced, or iceberg lettuce
02 - 3-4 small Persian cucumbers, finely diced
03 - 1 bunch green onions, thinly sliced
04 - 1/4 cup chives, finely sliced

→ Green Goddess Dressing

05 - Juice of 2 lemons
06 - 1/4 cup olive oil
07 - 2 tbsp rice vinegar
08 - 2 cloves garlic
09 - 1 small shallot
10 - 1 cup fresh basil
11 - 1 cup spinach
12 - 1/3 cup nutritional yeast
13 - 1/4 cup walnuts
14 - 1 tsp salt

# Instructions:

01 - Finely dice or chop all vegetables and combine in a large bowl.
02 - In a blender or food processor, add the dressing ingredients in this order: lemon juice, olive oil, rice vinegar, shallot, garlic, basil leaves, spinach, nutritional yeast, walnuts, and salt. Blend until smooth and creamy.
03 - Pour the dressing over the prepared vegetables and mix thoroughly. Serve immediately or refrigerate until ready to serve.
