Green Spinach Pasta Sauce (Print Version)

# Ingredients:

→ Sauce Base

01 - 90 g fresh spinach
02 - 1 handful fresh basil leaves
03 - 240 ml canned light coconut milk
04 - 2 tbsp nutritional yeast
05 - 1 tbsp cornstarch or potato starch
06 - 2 cloves garlic, peeled
07 - 1 tsp onion powder
08 - 1/3-1/2 tsp salt, to taste
09 - Black pepper, to taste
10 - 1 pinch ground nutmeg

# Instructions:

01 - Combine spinach, basil, coconut milk, nutritional yeast, starch, garlic, onion powder, salt, pepper, and nutmeg in a blender. Process until completely smooth.
02 - Transfer the blended mixture to a saucepan and bring to a boil over medium heat, stirring regularly to prevent sticking.
03 - Reduce heat and simmer for 1-2 minutes, stirring frequently until the sauce thickens to desired consistency.
04 - Pour over cooked pasta, grains, or potatoes and serve immediately.

01 - This sauce can be stored in an airtight container in the refrigerator for up to 3 days.
