Ground Beef and Potatoes (Print Version)

# Ingredients:

→ Main Ingredients

01 - 2 tablespoons olive oil
02 - 1 lb lean ground beef
03 - 1.5 lbs Yukon gold potatoes, peeled and cubed
04 - 1 medium yellow onion, diced
05 - 1 red bell pepper, diced
06 - 2-3 green onions, chopped

→ Liquids & Sauces

07 - 1 cup beef stock or water
08 - 2 tablespoons Worcestershire sauce
09 - 1 teaspoon Dijon mustard

→ Seasonings

10 - 1 tablespoon cumin
11 - 2 teaspoons paprika
12 - 2 teaspoons dried thyme
13 - 1 teaspoon garlic powder
14 - 1 teaspoon salt
15 - ½ teaspoon black pepper

# Instructions:

01 - Heat up olive oil in a large skillet over medium heat. Drop in your ground beef, season with half the spices, and cook until nicely browned, breaking it up as you go. Scoop it onto a plate for now.
02 - Using the same skillet, toss in your cubed potatoes. Add the rest of your spices, pour in the beef stock, and cover. Let them cook for 8-10 minutes, giving them a stir now and then, until they're tender and most of the liquid's gone.
03 - Throw your diced onion and bell pepper in with those potatoes. Cook until they're nice and soft.
04 - Put the beef back in the pan. Add your Worcestershire sauce and Dijon mustard, giving everything a good mix. Give it a taste and add more seasoning if needed.
05 - Sprinkle those fresh green onions on top and serve it up while it's hot.

# Notes:

01 - This dish reheats beautifully for leftovers the next day.
02 - Feel free to swap beef stock with water if you don't have any on hand.
